In April of 2008, Cyndi purchased the Dockside. It had been a long dream of her late husband Mel Robbins for years. You can find her behind the bar, or greeting her guests. When not at the Dockside, you'll find her at the Poland Spring Resort or at home with her 4 dogs, Bum, Emma, Togo, Penny or the cat, Sadie Ricker.
John Piper, Executive Chef Extraordinary!
John began his cooking career at the Resort at the age of16! John went on to culinary school and to cook in some of the finest restaurants in Florida, New Hampshire and Maine. He came back home 20 years ago to the Poland Spring Resort and was instrumental in opening the Dockside. We are pleased that he has returned to be our chef and friend.
Betty Campbell, Restaurant Manager
Betty is a special person that you'll fall in love with. She comes from a nursing background, but she loves managing the Dockside. In her spare time, she bakes the most amazing desserts. Want a real treat? Try Betty's brownie, with hot fudge, whip cream and nuts. YUMMY!
Tom Campbell, Boathouse Manager
No, not Betty's husband... at least not yet. Tom is the man that keeps everything outside perfect. Friendliest person you'll ever meet!
